Spring Recipe Roundup.
Hello!
Spring is officially here, and tulips will soon bloom, enticing us with their beauty. Beginning in May (weather permitting), you won’t be able to enter a grocery store without seeing bundles of asparagus everywhere, and our local organic farmers already have some greens like spinach and Bok Choy to distribute. I’ve been overloading on too many carbs this past winter and craving fresh greens. I’ve also been bored cooking the same old standards and looking forward to trying some new recipes.
Spring brings us vibrant colours, refreshing aromas, and renewed energy, and it is the perfect time to take advantage of the season‘s bounty and get creative in the kitchen.
These recipes come from The Blue Zone’s Newsletter, which Dan Buettner authors. The Blue Zones are regions in the world of extreme longevity.
The Five Blue Zones are:
· Sardinia, Italy.
· Okinawa, Japan.
· Nicoya, Costa Rica.
· Icaria, Greece.
· Loma Linda, California, USA.
Researchers discovered that these five regions have a high concentration of centenarians living healthy and vibrant lives by having enriched social lives and purpose, moving daily, and eating nutritious food.

I haven’t tried all of these recipes, but I have made many Blue Zone recipes and have never been disappointed. These recipes not only taste good, but they also nourish your body.
Bon appetit and stay well.
