Soups On!
Are you feeling the chill of the winter and the cost of food these days? Make more soup because it will warm you to your core and ease your food costs. Soup is satiating, delicious, nutritious, affordable and straightforward to make.
I keep our pantry stocked with staples so that I can whip up a quick soup in a few minutes:
Cans of beans-chick peas, white beans, and lentils.
Cans of tomatoes
Coconut milk can easily make a creamy soup.
Nutritional Yeast.
Vegetable broth.
I always have chopped kale or spinach in the freezer, and each week, I pre-chop carrots, celery, garlic and onions, as they make an excellent base for any soup.
To ease costs
I only purchase the pantry items, kale and spinach when they are on sale.

I added a cabbage and mushroom soup recipe below as I’ve found the price of cabbage and mushrooms to be reasonable compared to the cost of other vegetables.
When making any of the above soups, I’ll double or triple the recipes and often freeze some.
